Taiwanese Style 3 Cup Tofu Recipe

SHORT VERSION:

Cut Tofu into ~ 1 inch cubes. In a pot, add sesame oil (2T), Soy Sauce (4T), Rice Win (4T). Add Tofu into the pot. Cover, cook for 3 min. Open lid and stir, add water if too dry. Cover and cook for another 3 min. Done! See G.E.M. below for tips and additional steps to add more flavors.

INTRO:

3 Cup sauce is one of my favorite sauce. It’s also one of the most common and popular sauce combinations in Taiwan. There are many different variations and tricks to tweak the 3 Cup sauce, but it’s basically the combination of Sesame oil, Soy sauce, and Rice wine, 1 Cup each. Sesame oil is the key to give this sauce a unique flavor, but usually 1/2 Cup is enough. This sauce can be combined with chicken, tofu, vegetables, seafood, and various red meats for succulent dishes. the flavor and aroma will explode if you add ginger and Thai basil into the mix. These two ingredients are perfect matches for 3 cup sauce. In this post I will use tofu as the main ingredients and show a extremely delicious and easy Chinese Recipes. As for serving, you can pour it over rice or noodle, or pair with other meat/vegetables for good dinner ideas.

TIP:

Tip.1

Use firm tofu for better texture. You can also use frozen tofu for this dish.

Tip.2

Sesame oil can turn bitter quickly over high temperature, so tune down the heat when dealing with sesame oil.

G.E.M.1

Cook ginger in sesame oil over low heat to add flavor and aroma.

COOKWARE:

  • Skillet/pot (~ 6 or smaller, 2 Qt or smaller)

  • Tofu – 1 box.

Vegetable

  • (optional G.E.M.) Thai Basil– 1 handful
  • (optional G.E.M. )Ginger – 2 slices.

Sauce/condiments/Spices

Units: t = teaspoon, T = tablespoon.

*note* relative ratio is more important the absolute amount.

  • Sesame oil – 2 T (or 1/8 cup)
  • Soy Sauce – 1/4 Cup
  • Rice wine (i.e. sake or cooking wine) – 1/4 Cup
  • (optional) Sugar – 1 pinch for tasting.

BEFORE COOKING:

Prep.1

Cut Tofu into ~ 1 inch cubes.

(Optional G.E.M.) Slice couple slices of ginger

(Optional G.E.M.) Rinse Thai Basil

COOKING STEPS:

Cooking.1

In a pot, medium to low heat, add sesame oil (2T), add (optional) ginger slices, cook for ~ 1 min. Then add Soy Sauce (1/4 C), Rice Wine (1/4 C), Tofu (~ 1box, cubed). Cover and cook for ~ 5 min.

*note* if your sauce is not enough to cover the tofu, stir or flip the tofu after ~ 3 mins so the tofu can be thoroughly cooked.

Cooking.2

(Optional) G.E.M.2

Add Thai basil, quick stir, cook for another 30 s. Taste for saltiness, add sugar, salt, or some water to your liking.

Turn heat off and It’s ready to serve!
