Quick and Easy Chinese Vegetable Stir-Fry: Taiwan Cabbage with Bacon bites

SHORT VERSION:

Slice Taiwan Cabbage (~ 1lb) into strips, cut bacon (2 strips) into bite size. In a plastic bag (1 gallon), add sliced Taiwan Cabbage and salt (1 t), shake to mix. In a pot, high heat, cook bacon bites and garlic for ~ 1 min. Add Taiwan cabbage, sugar (1 pinch), stir to mix. Turn heat to low, cover, cook for 2 min. Done!

Intro:

In this post, I am sharing one of the common “home” dishes in Taiwan.  It’s not the common Chinese vegetable stir-fry that you will find in Chinese take-out. But it’s one of the best vegetable stir-fry dish I know. I love this dish because it has two of my favorite ingredients: Bacon and cabbage. In this recipe, we will use bacon to create wonderful pork flavors that goes perfectly with the sweet and crispness of the cabbage. All can be done with very easy recipes and couple of tips/tricks to 1.) marry the flavor from bacon, garlic, and cabbage and 2.) cook the cabbage so it’s tender and soft but still has some crispness when bite into it.. This dish is also an example how we can combine western ingredients (bacon) with Chinese/Taiwanese cooking techniques to create simple and delicious dishes. I hope you enjoy this recipe!

TIP:

Tip.1

Mix Salt (up to 2% of total weight) with cabbage before cooking to soften the cabbage, shorten the cooking time, and extract excess water.

Tip.2

“Steam” the cabbage instead of constantly stirring to save energy and cook the cabbage evenly.

Tip.3

Whenever you use bacon, try adding some garlic to it. They are perfect for each other.

Add red chili pepper to the dish to add an extra “kick” in flavor.

  1. Skillet/Pan (with a lid preferred)
  2. Knife

Protein

  • Bacon -2 strips

Vegetable:

  • Taiwan Cabbage (Green Cabbage is o.k.)- half cabbage, ~ 1lb,
  • Garlic Gloves – 5

Sauce/condiments/Spices

Units: t = teaspoon, T = tablespoon.

*note* relative ratio is more important the absolute amount.

  • Salt ~ 1 to 1 ½ t, adjust to your desire saltiness.
  • Sugar -1 pinch

Before Cooking:

Prep.1

Slice Taiwan Cabbage into strips, rinse and dry.

Prep.2

Slice bacon (2 strips) into bite size and smash and peel garlic gloves (see how here.)

In a bag, add Taiwan Cabbage slices and salt (1 ½ t), shake to mix for ~ 30s. See Tip.1 for why.

In a skillet/pan, turn heat on high. Add Bacon bites and garlic, cook until lightly brown (~ 30 to 60s). Add (G.E.M.1) red chili pepper if you like a little extra spicy flavor.

Cooking.2

Add salted Taiwan cabbages and sugar (1 pinch) into the skillet. Stir couple times to mix everything.

Cooking.3

Cover the skillet with a lid, turn heat to low for 2 min. This step helps the cabbage to cook evenly.

Turn heat off and It’s ready to serve!
