Give this Quick and Easy Oyakodon recipe a try! Tender chicken mixed with sweet onions and soft scrambled eggs in savory and sweet sauce in 10 min or less!

SHORT VERSION:

Cut chicken (boneless thigh or breast, ~ 0.5 lb) into bite size. Slice onion (~1/2 onion) thin. Beat eggs (2). In a skillet/pot, lay down sliced onions, then chicken bites, and add water (~ ¾ to 1C), Soy Sauce (2T), Mirin (2T), Sugar (1T). Turn heat to medium, cover and cook for ~5 min. Pour eggs over everything, cover, and cook for ~ 2 min.

INTRO:

Oyakodon is a popular and delicious Japanese donburi ((rice) bowl) that literally translates to “Parent and Child in a Bowl”. This interesting name refers to the use of chicken and eggs in the dish. This dish, in my mind, should be simple and bring out the chicken flavors naturally without too much manipulation. This is why I designed this recipe so it can be prepared in almost 1-step. But you can also add extra steps (see the G.E.M. steps in my recipe, or checkout the recipe by Marc Matsumoto from norecipe.com) to add more texture and flavor to the dish. As for serving, I would recommend pour the dish over short grain rice (the types of rice in Japanese or Korean restaurant). It just does taste as good to me on long grain jasmine rice (just my personal preference). Anyway, give it a try.  I hope you enjoy this dish and find this recipe helpful.

TIP:

Tip.1

Lay the sliced onion at the bottom so it can be cooked through in less time.

Tip.2

Taste the sauce for saltiness and sweetness after everything reaches boil, adjust taste by sugar or salt. The taste in Soy Sauce and Mirin can vary quite a bit from brand to brand.

Tip.3

Use a smaller skillet/pot with lid so all the ingredients can be covered by ~ 1C water.

GOING THE EXTRA MILE (G.E.M.)the small steps to take you dish to the next level

Pan-fry the chicken thigh with or without skin to create a seared crush on the surface.

Replace water with chick stock/broth for richer flavor.

Add the beaten eggs in 2 steps (half of the egg each time). 1st step of adding to bond everything together, and then add the rest of the eggs with short cooking time (~ 30s, low or no heat) to add a smooth texture.

  • Measuring spoons

  • Onion – half.

Sauce/condiments/Spices:

Units: t = teaspoon, T = tablespoon.

*note* relative ratio is more important the absolute amount.

  • Soy Sauce – 2T
  • Mirin – 2T
  • Sugar – 1T
  • Water or (optional G.E.M.) chicken broth – ¾ to 1C.
