SHORT VERSION:

Sprinkle Salt and Pepper (1 pinch on each side) on Escolar Fish Steak. Heat Pan, high heat. Add Oil (1 t), add escolar steak (1) into the pan. Cook for 2 min on each side.  Add rice wine (1T), cover and cook for another 1 min. Serve with a lemon wedge.

INTRO:

I recently came across Escolar Fish Steak in my local fish market. If Escolar is unfamiliar to you, maybe its other names such as “butterfish”, “oilfish” “white tuna”, or “king tuna” in Sushi restaurant will ring a bell. If you want to learn more about Escolar, here is the link to its wiki page. Escolar is very buttery and delicious with smooth and fine texture. It’s also extremely easy to prepare! But after a little research on Escolar, I found that eating too much Escolar can cause gastrointestinal symptoms (glad I didn’t eat too much). Sadly the reason why Escolar tastes so great is also the reason why our digestive system cannot handle it. The problem lies in the wax esters (similar to mineral oil) that escolar cannot metabolize which in turn gives the fish its rich and fatty texture. Click here to find out more. But despite having potential digestive problems, Escolar is just too delicious to pass up. So if you want to give it a try but worried about its side effects, just don’t eat portions larger than 6 oz and you should be fine.

Escolar Fish Steak usually comes frozen. Thaw the fish completely before cooking. There are mainly three ways to thaw (general thawing guideline, not specific to Escolar steak): 1. Overnight in refrigerator (37 to 41 F), 2. Seal a bag immersed in circulating cold water (68F, ~ 20 min), 3. Place in a bag immersed in hot water (100F, 11 min). Tip.2

I like to add rice wine (~1T) at the end of cooking to 1. Add more flavors to fish, 2. To “steam” the fish to make sure it’s cooked through (but not over cooked).

  • Escolar Fish Steak – ¾ to 1” thick. ~ 6 oz.

Sauce/condiments/Spices:

Relative ratio is more important. Adjust the total amount based on your situation.

  • Salt + Pepper – 2 pinchs
  • Rice Wine (sake or Chinese cooking wine) – 1 T
  • Oil – 1t
  • (optional) Lemon wedge/ juice

BEFORE COOKING:

Cooking.1

In a pan, high heat, add oil (1t), wait ~ 1 to 3 min to heat up the pan. Use a thermometer or place your hand ~ 3” above the pan to feel the heat. No need to be extremely hot.

Add Escolar Steak. Cook for 2 min each side. If you don’t hear the sizzling sound when you add the steak, then the pan is not hot enough. It’s ok the take the fish steak out and wait couple more minutes.

Add rice wine (1 T) to the side of the steak ( not directly onto the steak). Cover, cook for 1 min.
