Grilled Chicken Wings – Easy Chinese Style

SHORT VERSION:

In a plastic bag, marinate chicken wings (2lb) with sugar (1/2T), rice wine (1T), soy sauce (1.5T), Mirin (1T), rice vinegar (optional, ~1/4 T), garlic powder (optional), and 5 spice powder (optional, 0.5t) for 30 min to 12 hr (overnight in fridge). Pre-heat grill on low heat to ‘bake’ wings for 10 min. Turn grill to high and grill chicken wings for ~ 5 min.

Intro:

It’s summer! Of course it’s time for grill. When I think of grill, I think of ribs, steak, beef patties, and…Chicken Wing! But honestly, chicken wing is one of the toughest meats to grill. The fat in on the skin can drip into the flame and cause a burst of flame that burns the chicken wing right away. At the same time, the ‘drumstick’ part of the chicken wing is often too thick too cooked through while the tips get burn so easily. But it’s also one of the tastiest and one of my favorite cut of the bird. So here is it, my Chinese style chicken wing recipe. I also share a trick that helps me get good chicken wings every time. Give it a try and let me know what you think!

TIP:

Tip.1

Separate the wings and the ‘small drumstick’ because they need different cooking time and attention.

Tip.2

Marinate chicken wings overnight or poke some holes with fork for better flavor penetration.

Tip.3

Use the pre-heat step to ‘bake’ the wings on the gas grill. When grilling at high heat, flip the chicken wings frequently.

Tip.4

I like to add a little bit of vinegar to give the wings a bit of sour taste, it’s optional if you like sweet teriyaki like sauce.

Tip.5

To melt the sugar and get a better consistency for the marinating sauce, I usually microwave the marinate for 30s before marinating.

  • Sugar – 0.5 T
  • Mirin – 1T
  • Rice wine (non-salted) – 1T
  • Vinegar (optional) – 0.5T
  • 5-spice powder (optional) – 0.5 t
  • Garlic powder (optional) – 1t

In a plastic bag, mix sugar (1/2T), rice wine (1T), soy sauce (1.5T), Mirin (1T), rice vinegar (optional, ~1/4 T), garlic powder (optional), and 5 spice powder (optional, 0.5t) and chicken wings. Let it marinate for > 30 min. See Tip.2 for faster marinate.

Turn on grill (gas) to mid to low flame, put the chicken wings on the upper rack and close the lid. ‘Bake’ for ~ 10 mins or until chicken is cooked ~ 2/3 of the way.

Turn grill to high, move the chicken wings down to grill over the flame at high heat. Flip the chicken wing frequently (every 15 to 30s or so) to prevent burn. Cook for another 3 to 5 min or until you get a nice brown, golden crispy skin on the wings.

Turn the grill off and it’s Ready to serve!
