SHORT VERSION:

(Optional) Pound Pork chops (~ ½ to ¾” thick) with a mallet, then drizzle some soy sauce for a thin coating. In a small bowl, mix Ketchup (1/4 C), Orange Juice (1/2C), and vinegar (2T). In a pan, high high, add oil (1t), grill pork chops ~ 1 min each side. Add sauce mixture, turn heat to medium-low. Cook Pork Chops in sauce for ~ 3 to 5 min.

INTRO:

Sweet and Sour sauce is definitely one of the most popular sauces in America, there is just something about this combination that triggers people’s appetite. Sweet and sour, in its simplest form, is sugar and vinegar. But pure sugar and vinegar taste is a bit boring. So I thought, what is the sauce that every household uses and taste sweet and sour? It’s Ketchup! But just ketchup is not enough. We want something that can bring natural fruit sweetness to the sauce, ideally with some sour taste as well. So I found Orange juice. So there you have it! Sweet and sour sauce made of Ketchup and orange juice. But the “right” ratio of sweet and sour is different for everyone. I like my sauce slightly sour, so I added some vinegar. I would encourage everyone to try out different combinations to find the right balance to satisfy your taste bud. I am pairing the sweet and sour sauce with pork chops in this recipe, but you can substitute it with chicken beef, tofu, or anything you like.

Tip.1

Adjust the ratio of ketchup and orange juice to your liking. You can also add sugar, water and/or vinegar to find the right sweet and sour balance.

Tip.2

Add slight salt or soy sauce before cooking pork chops helps to bring out the meaty flavor.

GOING THE EXTRA MILE (G.E.M.) – the small steps to take your dish to the next level

Add five-spice powder (1 pinch) to add authentic Chinese food flavor.

Pound the pork chops (wrap in plastic wrap first) before cooking. This form of mechanical tenderization can: 1. Tenderize pork, 2. Make it look bigger, 3. Make it easier to soak in sauces.

  • Pan or Skillet (~8”)
  • (optional) Mallet or any mechanical meat tenderizer.

Protein

  • Pork Chops (2 chops, ~ ½ to ¾” in thickness)

Sauce/condiments/Spices:

Relative ratio is more important. Adjust the total amount based on your situation.

  • Orange Juice – ½ C
  • Ketchup – ¼ C
  • Vinegar – 2 T
  • Soy Sauce –  1 t
  • (Optional G.E.M.) Five spice powder (1/2 t)

 

BEFORE COOKING:

(Optional G.E.M.2) Pound Pork chops (~ ½ to ¾” thick) with a mallet, then drizzle some soy sauce (~ 1t) to form a thin coating. This adds slight burned soy sauce flavor when cooking pork chops. You can also sprinkle some salt instead.

In a small bowl, mix Orange Juice (½ C), Ketchup (¼ C), Vinegar (2 T).

In a skillet, high heat, add oil (1t), add Pork Chops, cook for ~ 1 min each side.

Add sauce in Prep.2, turn heat to medium-low. Cook for 3 min. Add some more orange juice or water (~ 1 T) if the sauce reduces too quickly to prevent burn.

Turn off heat and It’s Done!
