SHORT VERSION:

Pre-heat Oven to 350 F. Pad dry chicken drumsticks (3 to 6) with paper towel. Rinse with a mixture of Water (6T), Honey (1T), and white vinegar (3T). Set drumsticks on a oven safe rack and put in the oven to bake for 1 hour.

INTRO:

Oven baked or roasted chicken are delicious! It would be even better if they have crispy skins. I was craving for Chinese crispy skin duck when I develop this recipe. But most of the recipes for crispy skin duck require 4 hours air dry in order to remove the moisture from the skin after putting on the coloring and flavoring liquid (i.e. sugar coating, or maltose with water, etc.). 4 hours air dry is a long time, not to mention another 45 to 1 hr of baking afterwards! There must be easier and faster ways to shorten the process and still create crispy moist chicken. What I found is that I can skip the air drying step completely by baking in the oven at low temperature (~350F) for ~ 1 hour. My thinking was that baking helps to remove the moisture in the skin and at the same time cook the chicken to reach juice perfection. But there is more to golden crispy Chinese style baked chicken (the coating). Read on to find out more!

TIP:

Tip.1

Dry the Chicken as much as possible before rinsing with honey water so the honey water can stick to the drumstick better.

Tip.2

The more honey you add and the higher the baking temperature, the darker the drumsticks will get. I found 350 F for 1 hour & honey : water = 1:6 to work best for me. If you would like to have a darker skin, simply add ~ 1/2 to 1 t of dark vinegar.

Tip.3

Add vinegar (white) to add flavor and to “stabilize” the water and honey mixture so it won’t turn dark too quickly.

Tip.4

Every oven heats up and maintains temperature differently. So the exact baking time might vary. Check the chicken drumsticks every 10 to 20 min to prevent chicken drumsticks from turning too dark.

Marinate the chicken with rice wine (2T), Soy Sauce (3T), Sugar (1T), and five-spice powder (1 pinch) in fridge overnight for greater flavor. I use this marinate recipe for Taiwanese Salt and Pepper Chicken (鹹酥雞) also.

Slice a lemon wedge to serve with the chicken drumsticks.

  • Chicken drumsticks (3 to 6) – you can use other chicken parts of even whole chicken. but the baking time will vary. Drumsticks are much easier to deal with because they stay tender and juicy even after long baking time.

Sauce/condiments/Spices:

Relative ratio is more important. Absolute amount depends on your pot size, shape, amount of meat, etc.

  • Honey- 1 T
  • Water – 6 T
  • Vinegar – 3T
  • (Optional G.E.M.1) rice wine (i’m using sake) – 2 T
  • (Optional G.E.M.1) Soy Sauce – 13 T
  • (Optional G.E.M.1) Sugar – 1 T
  • (Optional G.E.M.1) five spice powder- 1 pinch
  • (optional G.E.M.2) Lemon wedge -1 slice.

BEFORE COOKING:

Mix Water (6T), Honey (1T), and white vinegar (3T) in a small container.
