Hands-on Time: 5 min. Total Time: 1.5 hr.

SHORT VERSION:

In a pot, turn heat on high, add Pork roast (~ 2 lb), add Coke (~ 4 C, or at leaast covering the pork up to half way), and add salt (~ 1T). Taste and adjust for saltiness after coke reach boil. Cover, turn heat to medium-low. Cook for ~ 2 hr. Done!

INTRO:

This Pork and Coke recipe is probably the simplest and easiest recipe that I have shared so far. Only three ingredients required: Pork, Coke, and Salt. Simply add coke, salt, and pork in a pot and cook for ~ 1.5 hr. no need to really measure anything, just follow your taste bud. Coke, in my opinion, is a vastly underrated ingredient for slow cooking. A little salt and coke is all that’s needed to bring out the wonderful sweet, savory, and meaty flavor. No Soy Sauce necessary. In this recipe, I am using Pork shank. Pork shank, to me, has the right balance of fat, skin, and meat ratio with lots of collagen that could help the ladies improve their skins (not scientifically proven, unfortunately.) If you don’t like pork shank, fell free to substitute different cuts of pork or different meat (Coke Chicken wing is another popular option.)

TIP:

Tip.1

There will be lots of bubble/foams popping up initially after adding coke. Uncover the pot and adjust the liquid level and heat to avoid spilling.

Tip.2

Use fresh and regular coke (Diet and/or flat coke doesn’t work well) so we can take advantage of the carbonate content to tenderize meat. Don’t use diet coke because artificial sweetener decomposes during cooking and loses the color and the sweet flavor in the coke.

Tip.3

This recipe can be applied to almost all types and cuts of meats for slow cooking. Some of my favorites include Chicken wings, Pork hocks, shoulder, picnic roast, ribs, Beef Shank, Beef chuck roast.

Add Star Anise (1 whole) or five-spice powder (1/2 t) to add extra flavor.

Brown sugar (~ 2 T) and coat pork with the glaze to add caramelized color before adding coke.

Protein

  • Pork Shank – 2lb. You can also use other cuts of Pork such as pork shoulder, pork ribs, pork butt, or any cut you like.

Sauce/condiments/Spices:

Relative ratio is more important. Absolute amount depends on your pot size, shape, amount of meat, etc.

  • Coke-Cola or Pepsi – 1 Liter or ~ 4 Cups.
  • Salt – 1 T.
  • (Optional G.E.M.) Star Anise – 1
  • (Optional G.E.M.) Sugar – 2 T

Melt and caramelize sugar and coat the pork with caramelized sugar.

In a pot, add Pork Hocks or Pork roast meat of your choice (2lb), add Cola (~ 4C) to at least half the height of the pork to reduce the risk of drying out the liquid. You can completely cover the pork in coke if you like. Add Salt (1T). Turn heat on high. See Tip.1 to avoid spill.

Cooking.3

Once coke reaches a boil, turn heat to low or the liquid is just barely bubbling the liquid. Taste for saltiness. Add salt or coke to your liking. Cover and cook for ~ 1.5 hr.
